RECIPE: Matzo Brei

INGREDIENTS

  • caramelized onion
  • salt and freshly ground black pepper
  • 4 matzo boards 
  • 6 eggs
  • sour cream and applesauce, for serving

METHOD

  1. Caramelize 1-2 onions in a skillet and season with salt and pepper.
  2. Soak the matzo in a large bowl of warm water for a few seconds to soften and just soak through until soft and no longer snap like a cracker. Drain the matzo in a colander.
  3. Beat the eggs in a large bowl and season with salt and pepper.
  4. Break the matzo into small pieces and add them to the egg bowl.
  5. Stir to coat so that the matzo is evenly coated with the egg mixture. Let this sit for 2 to 3 minutes.
  6. Return the skillet to medium-low heat and add the matzo mixture to the caramelized onions.
  7. Season to taste with salt and pepper.
  8. Cook, scraping the bottom of the skillet occasionally, almost like you’re making a soft scramble, until the eggs are just set, then remove the skillet from the heat.
  9. Serve with sour cream and applesauce.
