RECIPE: Persian Raisin Cookies

INGREDIENTS

  • ¾ cup butter softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ½ cup flour
  • 1 ¼ cup raisins
  • 3 eggs

METHOD

  1. Preheat the oven to 400 degrees.
  2. Cream the softened butter and sugar together with a mixer for about 1 minute.
  3. Add in one egg at a time, mixing after adding each egg until all three are incorporated.
  4. Add in the teaspoon of vanilla extract.
  5. Add the flour mixture gradually and mix only until you get a very smooth dough.
  6. Fold in the raisins.
  7. Use a 1 tbsp cookie scoop to place balls of dough about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes until the edges slightly brown but the top does not.
  9. Remove the cookies the oven and set it on a cooling rack to cool before transferring them on a rack. 
  10. Enjoy them with tea!
