RECIPE: Iraqi Date Cookies

INGREDIENTS

Dough

  • 1 kg self raising flour
  • 10 g instant dry yeast
  • 50 g butter
  • 1 cup vegetable oil
  • 2 cups luckeworm water
  • 1 tsp salt
  • 2 tsp sugar

Filling

  • 3 eggs, beaten
  • 1 tbsp water
  • 1/2 cup sesame seeds

Garnish


METHOD

  1. Mix the flour, dry yeast, oil, butter, sugar, salt, and water.
  2. Knead well (about 10 minutes).
  3. Place the dough in an an oiled bowl and rub some oil on top of the dough.
  4. Cover with a kitchen towel, set aside in a warm spot for 1-2 hours. 
  5. Preheat oven to 375°F.
  6. Divide the dough into ping-pong-sized balls (about 30 grams each) and place on a floured surface.
  7. Fill each ball with a tsp of date paste by holding the ball in one hand and using your thumb to create a hole in the dough.
  8. Pinch dough closed, dip it into the egg wash, and roll in sesame seeds. 
  9. Roll the balls flat until about 4 inches in diameter. 
  10. Place the cookies on a lined baking sheet and bake for 12 to 20 minutes, until golden and crispy.
