RECIPE: Green Bean Salad with Balsamic Vinegar and Dill


  • French green beans (haricots vert), both ends cut off
  • extra virgin olive oil
  • balsamic white vinegar
  • minced fresh dill
  • condiments (salt and pepper)


  1. Blanch the green beans
  2. Whisk a garlic vinaigrette with olive oil, balsamic vinegar, and salt and pepper to taste
  3. Coat the beans with the vinaigrette
  4. Sprinkle the dill
  5. Season to taste with salt and freshly ground black pepper.
  6. Chill until ready to serve.
