RECIPE: Espinacas con Garbanzos


INGREDIENTS

  • 1 cup of dried garbanzo beans (chickpeas) or 19 oz of cooked chickpeas, rinsed and drained
  • 1 lb fresh spinach
  • 4 large cloves of garlic, peeled
  • 2 thick (½ inch) slices of day old bread with crust removed
  • 15 blanched unsalted Marcona almonds
  • 1 tsp cumin
  • ¼ cup tomato sauce
  • 1 tsp pimentón de La Vera (Spanish paprika)
  • ¼ cup extra virgin olive oil
  • 2 tablespoons of vinagre de Jerez (sherry vinegar)
  • Salt and pepper to taste
  • Cayenne pepper to taste (optional)

METHOD

  1. Heat 1 tbsp oil in a skillet and sauté the bread, raw almonds, garlic, cumin, cayenne and black pepper over medium heat until golden brown on all sides of the bread. Transfer to a mortar, add salt and vinegar and mash to a paste with a pestle.
  2. Add remaining oil to the skillet and heat. Quickly sauté the spinach for a few minutes, add the paprika, chickpeas, bread and garlic paste, and spices. Cook over medium heat for a minute, adding water if the mixture is dry. Turn off the heat and leave it to sit for 10 minutes for the flavors to meld.
  3. Season with salt and pepper to taste.
  4. Serve with bread, a light drizzle of fresh olive oil and a sprinkle of pimentón.

RECIPE: Salmorejo Cordobés


INGREDIENTS

  • 10 plum tomatoes, halved, seeded, coarsely chopped (about 6 cups)
  • 2 cups (packed) coarsely torn day-old baguette with crust (about 4 ounces)
  • 1 tablespoon coarse kosher salt
  • 1/3 cup coarsely chopped onion
  • 1/4 cup Sherry wine vinegar
  • 1 1/2 tablespoons fresh lemon juice
  • 1 garlic clove, peeled
  • 1 1/2 cups extra-virgin olive oil
  • 2 hard-boiled eggs, coarsely chopped
  • 1/3 cup chopped Jamón Serrano
  • Fruity Spanish olive oil (for drizzling)

METHOD

  1. Stir 2 cups water and 1 tablespoon coarse salt in medium bowl to dissolve. Add bread; soak 30 minutes. Squeeze excess liquid from bread; reserve soaking liquid.
  2. Puree half each of chopped tomatoes, chopped onion, Sherry wine vinegar, fresh lemon juice, and garlic in blender until very smooth. With machine running, gradually add half of bread, adding reserved soaking liquid by tablespoonfuls if mixture is too thick to blend. Puree until very smooth. With machine running, gradually add half of light extra-virgin olive oil (mixture will turn slightly orange). Transfer to large bowl. Repeat with remaining chopped tomatoes, chopped onion, Sherry wine vinegar, fresh lemon juice, garlic, bread, and oil. Cover and chill at least 2 hours and up to 1 day. Season to taste with salt.
  3. Sprinkle chopped egg and ham over. Drizzle with Spanish olive oil and serve.

RECIPE: Gazpacho


INGREDIENTS

  • 6 to 8 large beefsteak or other full-flavored tomatoes
  • 1 small sweet yellow or red onion, chopped
  • 4 garlic cloves
  • 6 Tbs. red wine vinegar, or to taste
  • 2 regular or 1 English (hothouse) cucumber, halved, peeled, seeded and diced
  • salt and freshly ground pepper, to taste
  • 1 tablespoon chopped tarragon, optional
  • 1 small green bell pepper, seeded and finely diced
  • crusty rustic bread

Optional Toppings

  1. Reserved cucumber, diced
  2. 8 cherry tomatoes, diced finely
  3. 2 hard boiled eggs, crumbled
  4. 1 ear of corn, blanched and kernels sliced off
  5. 1/2 avocado, diced finely
  6. 1 small shallot, chopped finely
  7. olive oil

METHOD

  1. Blanch the tomatoes in boiling water for 1 minute. Rinse them under cold water to cool them and stop the cooking process. Peel, core, seed and dice them.
  2. Blend together the tomatoes, pepper, 3/4 of the cucumber, onion, garlic, tarragon and a dash of chili flakes until very smooth in texture. Stir in the vinegar, olive oil, season with salt and pepper and transfer to a container. Cover and refrigerate for 2 hours, or overnight so that the flavors develop even more.
  3. Serve with bread and a mixture of hard boiled egg, chopped tomato, cucumber, avocado, shallot and corn. Add a drizzle of of olive oil and season with more salt or pepper and oil if necessary.
