- 1 large onion, diced
- 4 tomatoes, diced
- 1 green or red bell pepper, diced (optional)
- ⅓ cup chopped parsley
- ¼ cup white wine vinegar
- ½ cup olive oil
- Salt and pepper to taste
- Combine all the ingredients in a large bowl and mix well.
