RECIPE: Green Bean Salad with Lemon and Dill

  • French green beans (haricots vert), both ends cut off
  • extra virgin olive oil
  • fresh lemon juice
  • minced fresh dill
  • condiments (salt, pepper)


  1. Blanch the green beans
  2. Whisk a garlic vinaigrette with olive oil, fresh lemon juice, and salt and pepper to taste
  3. Coat the beans with the vinaigrette
  4. Sprinkle the dill
  5. Season to taste with salt and freshly ground black pepper.
